At the turn of the century, Paul Sartori emigrated to the United States from the small town of Valdastico just a few miles from Asiago, in the picturesque, northern provinces of Italy. Paul Sartori was determined to bring fine Italian cheese making to America. He founded S&R Cheese, now Sartor Foods, in beautiful Plymouth, Wisconsin in 1939. The Kettle Moraine region of east-central Wisconsin provided an ideal setting to replicate tradition cheese making with a similar climate and rural landscape to Northern Italy. Joe Sartori, Paul’s son, guided and expanded the business for over 30 years.
Now in its third generation of family ownership, Paul’s grandson, Jim Sartori, has continued the Sartori Foods tradition as a privately-held, family-owned manufacturer focused on producing high quality, specialty cheese. Utilizing the rich farmland and plentiful milk supply of the surrounding area, Sartor Foods has established a network of patron family farmers dedicated to supplying quality milk. Their team of Master Cheesemakers remains involved in all aspects of the cheesemaking process while their product developers and culinary specialists focus on ensuring consistent functionality and designing creative, culinary applications.
Innovation and creative thinking are key to the success of Sartori Foods. As they expand and develop beyond traditional cheese products, they continue to broaden their focus to include unique, signature cheeses such as Bellavitano, a creamy, aged cheese featuring a complex and unique flavor profile.

Sartori Bellavitano: a cross between parmesan and cheddar, creamy like cheddar with the taste and characteristics of parmesan which offers a versatile flavor with excellent melting characteristics and a smooth, creamy mouth feel.
Sartori Asiago: has a mild flavor and a varying textural qualities depending on age. Made form cow’s milk, it is a sweet curd, semi-cooked, Grana-type cheese with a cheddary, nutty flavor and a pungent aroma. Asiago works well as a signature cheese and base for a great recipe. It can be used in flavorful sauces, soups and prepared meals with great success.
Sartori SarVecchio Parmesan: a hard Grana-type cheese that has a distinct granular texture. A sweet, mellow, nutty flavor is achieved during curing. It is normally ivory or pale yellow in color. Sartori Foods offers a fresh grated version of Parmesan that gives sauces and prepared meals a wonderful flavor. Sartor fresh grated Parmesan variations are an excellent addition to salad dressings as well.
